Recipe #3: Green Salad Tossed with Vinaigrette with Mediterranean Flavors

For Dressing:

  • 1 tablespoon capers
  • 1 teaspoon minced fresh thyme
  • 1 tablespoon minced fresh parsley
  • 1 medium clove of garlic minced fine
  • 1/2 teaspoon table salt
  • 1/4 teaspoon ground black pepper
  • 5 tablespoons extra virgin olive oil
  • 4 teaspoons lime juice from one-half of a medium lime
  • 2 quarts mild salad greens such as romaine, Boston, Bibb, or other leaf lettuces
  • 1. Mix first seven ingredients (all but the lime juice) with fork in small bowl.

    2. Add lettuces to a large salad bowl (at least 4-quart). Just before ready to serve, whisk lime juice in with the other dressing ingredients, and toss the salad greens to coat.
